  1. Wash and peel the quinces, cut them into small pieces, and remove the seeds.
  2. Place the quince pieces in a large pot with sugar, lemon juice, and hazelnut liqueur (optional); let it macerate.
  3. Add cinnamon, bring to a boil, and cook for about 40 minutes until the quince is soft and reddish.
  4. Remove the cinnamon stick, blend the quince into a smooth puree, and pour it into a rectangular mold.
  5. Allow it to cool completely at room temperature, then refrigerate for a few hours until it solidifies.
  6. Unmold the quince and cut it into preferred-sized portions. Enjoy!
