New Potato Salad

Ingredients:

  • 500g new potatoes
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons white wine vinegar
  • 1 small red onion, finely chopped
  • 2 stalks celery, chopped
  • 3 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions:

  1. Boil the new potatoes in a large pot of salted water until tender when pierced with a fork, about 15 to 20 minutes.
  2. Meanwhile, in a large bowl, mix together the mayonnaise, Dijon mustard, white wine vinegar, chopped red onion, chopped celery, and fresh parsley. Season with salt and pepper to taste and mix well.
  3. Once the potatoes are cooked, drain them and let them cool slightly. Then, cut them into medium-sized pieces and add them to the bowl with the dressing mixture.
  4. Gently toss the potatoes with the dressing until well coated.
  5. Refrigerate the salad for at least 1 hour to allow the flavors to blend and the potatoes to absorb the dressing.
  6. Before serving, adjust seasoning if necessary and garnish with a little more chopped fresh parsley.
