Recipe: Stir-fried Bimi with Garlic Prawns

Ingredients:

  • 400 g of bimi
  • 300 g of peeled prawns
  • 4 cloves of garlic
  • 1 chili pepper
  • Extra virgin olive oil
  • Salt and pepper
  • Fresh chopped parsley

Preparation:

  1. Wash the bimi and cut it into small pieces. Blanch it in a pot with boiling water and salt for about 3 minutes. Drain and set aside.
  2. Peel and chop the garlic and chili pepper. Heat some oil in a large pan and sauté them over medium heat until they start to brown.
  3. Add the prawns, season with salt and pepper to taste, and stir-fry over high heat for about 5 minutes, stirring occasionally, until they are pink and cooked.
  4. Add the bimi and mix well with the prawns and flavored oil. Cook for a few more minutes until the bimi is hot and tender.
  5. Sprinkle chopped fresh parsley on top and serve the stir-fried bimi with garlic prawns as a main dish or side dish.
